Introduction:

Black Forest Cake, or Schwarzwälder Kirschtorte, is a traditional German dessert featuring layers of moist chocolate sponge cake, whipped cream, and cherries. The cake is infused with Kirsch (cherry brandy) for a distinct flavor, and topped with chocolate shavings for a rich, decadent finish. This elegant dessert is perfect for celebrations or special occasions.

Ingredients:

  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 4 large eggs
  • 1 cup granulated sugar
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 tsp vanilla extract
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 can (14 oz) sour cherries, drained
  • ¼ cup Kirsch (cherry brandy, optional)
  • 1 cup dark chocolate shavings (for garnish)

Instructions:

  1. Make the chocolate sponge cake:
    Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  2. Prepare the batter:
    In a large bowl, beat the eggs and sugar with an electric mixer until pale and fluffy (about 5 minutes). Gradually add the melted butter, milk, and vanilla extract, mixing until combined. Gently fold in the dry ingredients, taking care not to overmix.
  3. Bake the cake:
    Divide the batter evenly between the two prepared pans and smooth the tops. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  4. Whip the cream:
    In a chilled mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Refrigerate the whipped cream until ready to use.
  5. Assemble the cake:
    Once the cakes are cooled, slice each one in half horizontally to create four layers. Brush each layer with Kirsch (if using). Spread a layer of whipped cream over the first layer of cake, then add a layer of cherries. Repeat with the remaining layers. Cover the top and sides of the cake with whipped cream.
  6. Decorate the cake:
    Press chocolate shavings onto the sides of the cake and sprinkle more on top. Pipe extra whipped cream rosettes around the top edge of the cake and garnish with whole cherries, if desired.
