Instructions

  1. Preheat:

    • Preheat the oven to 325°F (165°C). Grease a 9-inch springform pan.
  2. Make the crust:

    • Combine the graham cracker crumbs, ¼ cup of sugar, and melted butter in a bowl. Press the mixture into the bottom of the prepared pan. Bake for 10 minutes, then let cool.
  3. Prepare the filling:

    • In a large mixing bowl, beat the cream cheese until smooth. Add 1 cup of sugar and vanilla extract, beating until well combined. Add the eggs, one at a time, mixing on low speed after each addition. Stir in the sour cream and flour.
  4. Bake:

    • Pour the filling into the cooled crust. Bake for 55-60 minutes, or until the center is almost set. Turn off the oven and let the cheesecake cool inside for 1 hour.
  5. Chill:

    • Transfer the cheesecake to the refrigerator and chill for at least 4 hours, preferably overnight.
  6. Serve:

    • Carefully remove the cheesecake from the springform pan. Slice and serve plain or with toppings like fresh fruit, whipped cream, or caramel sauce.
