  • 2 green onions, chopped

  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger

Instructions

  1. Make the Dough:

    • In a mixing bowl, combine the all-purpose flour and water. Knead the mixture until a smooth dough forms, adding more water if necessary. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
  2. Prepare the Filling:

    • In a large bowl, combine the ground meat, chopped napa cabbage or spinach, green onions, minced garlic, soy sauce, sesame oil, grated ginger, salt, and pepper. Mix well until all ingredients are thoroughly combined.
  3. Roll the Dough:

    • After resting, divide the dough into small pieces (about the size of a golf ball). Roll each piece into a thin circle (about 3 inches in diameter) on a lightly floured surface.
  4. Fill the Dumplings:

    • Place a small spoonful of filling in the center of each dough circle. Fold the dough over to create a half-moon shape and pinch the edges tightly to seal, ensuring there are no air pockets. For decorative pleats, pinch the edges together as you seal.
  5. Cook the Dumplings:

    • Steaming: Arrange dumplings in a steamer basket lined with parchment paper. Steam over boiling water for about 15-20 minutes until cooked through.
    • Boiling: Bring a large pot of salted water to a boil. Carefully add the dumplings and cook for about 6-8 minutes or until they float to the surface and are cooked through.
    • Pan-Frying: Heat a little oil in a non-stick skillet over medium heat. Arrange dumplings in the skillet and fry until golden brown (about 3-4 minutes). Add water to the skillet (enough to cover the bottom) and cover with a lid. Steam for about 8-10 minutes until the water evaporates and the dumplings are cooked through.
  6. Serve:

    • Serve the dumplings hot with a dipping sauce made of soy sauce, vinegar, and chili oil.
