Enjoy Kare Raisu, a comforting Japanese curry rice dish featuring tender meat and vegetables simmered in a rich curry sauce, served over rice.

Introduction

Kare Raisu, or Japanese curry rice, is a beloved comfort food in Japan. This dish features tender chunks of meat, usually chicken, pork, or beef, and an assortment of vegetables such as carrots and potatoes, all simmered in a flavorful curry sauce. The thick, aromatic curry is typically served over steamed rice, making it a hearty and satisfying meal. Kare Raisu is a staple in Japanese households and is enjoyed for its comforting flavors and ease of preparation.

Ingredients

  • 500 g (1 lb) meat (chicken, pork, or beef), cut into bite-sized pieces
  • 2 medium onions, chopped
  • 2 medium carrots, sliced
  • 2 medium potatoes, cubed
  • 3 cups water or chicken broth
  • 1-2 tablespoons vegetable oil
  • 1 package (100 g) Japanese curry roux (available in various spice levels)
  • 3 cups cooked Japanese short-grain rice
  • Optional: Green peas or bell peppers for added color

Instructions

  1. Sauté the Vegetables:

    • In a large pot, heat 1-2 tablespoons of vegetable oil over medium heat. Add the chopped onions and sauté until they become translucent, about 4-5 minutes.
  2. Cook the Meat:

    • Add the meat to the pot and cook until browned on all sides. This should take about 5-7 minutes. Stir occasionally to ensure even cooking.
  3. Add the Vegetables:

    • Add the sliced carrots and cubed potatoes to the pot, stirring to combine. Pour in the water or chicken broth and bring to a boil.
  4. Simmer the Curry:

    • Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 15 minutes, or until the vegetables are tender.
  5. Add the Curry Roux:

    • Break the curry roux into pieces and add it to the pot. Stir well to dissolve the roux completely, allowing the sauce to thicken. Continue to simmer for an additional 5-10 minutes, stirring occasionally.
  6. Serve:

    • Serve the Kare Raisu hot over cooked Japanese rice. Optionally, garnish with green peas or bell peppers for added color and flavor.

Health Notes

  • Kare Raisu can be high in calories and sodium, especially with store-bought curry roux. To make it healthier, consider using lean cuts of meat, reducing the amount of oil, and incorporating more vegetables. Look for low-sodium curry roux options or make your own from scratch using spices.

Serving Suggestions

  • Kare Raisu is best served hot. It pairs well with a side of pickled vegetables or a simple salad to balance the richness of the curry.

Tips

  • Roux Selection: Japanese curry roux comes in various spice levels. Choose one that suits your taste preference, keeping in mind that mild options are more suitable for families with children.
  • Flavor Enhancements: For added depth, consider incorporating a teaspoon of grated ginger or garlic when sautéing the onions. You can also add a splash of soy sauce for extra umami.
  • Storage: Kare Raisu can be stored in the refrigerator for up to 3 days. It tastes even better the next day as the flavors continue to meld together.
