Essential details to help you make informed, healthy choices about our dishes.

Kebabs are a delicious and flavorful dish featuring marinated meat, grilled to perfection, often served with flatbreads, fresh vegetables, and sauces.

Introduction:

Kebab is a popular Middle Eastern dish consisting of skewered and grilled meat, often lamb, beef, or chicken, marinated in a rich blend of spices. Traditionally cooked over an open flame, kebabs are known for their smoky, charred exterior and tender, juicy interior. This dish can be served with pita bread, rice, or a fresh salad, and is perfect for gatherings or weeknight dinners. Kebabs are incredibly versatile and can be adjusted to suit various taste preferences, making them a crowd-pleaser at any table.

Ingredients:

For the kebabs:

  • 500g lamb or beef (or chicken), cut into 1-inch cubes
  • 1 large onion, finely grated
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons yogurt (optional, for tenderizing)
  • 1 tablespoon lemon juice
  • 1 tablespoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric (optional)
  • ½ teaspoon ground cinnamon
  • Salt and pepper to taste
  • Wooden or metal skewers (soaked in water if using wooden)

For serving:

  • Flatbreads or pita
  • Fresh vegetables (tomatoes, cucumbers, onions, etc.)
  • Yogurt-based sauce (tzatziki or garlic sauce)
  • Lemon wedges
  • Fresh herbs (parsley, mint)

Instructions:

  1. Prepare the marinade:
    • In a large mixing bowl, combine the grated onion, minced garlic, olive oil, yogurt (if using), lemon juice, cumin, coriander, paprika, turmeric, cinnamon, salt, and pepper.
    • Add the cubed meat to the bowl and toss to coat thoroughly with the marinade. Cover and refrigerate for 1-2 hours, or overnight for deeper flavor.
  2. Prepare the grill or oven:
    • Preheat a grill to medium-high heat or set the oven to broil. If using a grill, brush the grates with oil to prevent sticking.
  3. Assemble the kebabs:
    • Thread the marinated meat onto skewers, leaving a little space between each piece for even cooking. If desired, you can alternate the meat with vegetables like bell peppers or onions.
  4. Grill the kebabs:
    • Place the skewers on the grill and cook for 4-5 minutes on each side, rotating regularly to ensure even cooking. The kebabs are done when the meat reaches your preferred level of doneness (internal temperature of 60°C for medium).
    • If using the oven, place the skewers on a baking sheet lined with foil and broil for 10-12 minutes, turning halfway through.
  5. Serve:
    • Serve the kebabs with flatbreads or pita, a side of fresh vegetables, yogurt sauce, and lemon wedges for a refreshing contrast. Garnish with fresh parsley or mint.

Health Notes:

  • Kebabs are a protein-rich dish, making them a great option for a balanced meal. Using lean cuts of meat, such as lamb leg or chicken breast, can reduce the fat content. Pairing kebabs with fresh vegetables and a light yogurt-based sauce makes the dish nutritious and satisfying without adding excess calories. Opting for whole-wheat pita or flatbread can increase the fiber content of the meal.

Serving Suggestions:

  • Serve kebabs with a side of couscous, bulgur, or rice for a complete meal.
  • Pair with grilled vegetables like zucchini, eggplant, or bell peppers for added nutrition.
  • A side of tzatziki or garlic sauce provides a creamy, tangy contrast to the savory kebabs.

Tips:

  • Marination time: For the most tender and flavorful kebabs, marinate the meat for at least 2 hours, or even overnight, if possible. The yogurt helps tenderize the meat, while the spices infuse it with rich flavors.
  • Grilling technique: Keep the grill temperature at medium-high to ensure the meat develops a nice char on the outside while staying juicy inside. Avoid overcooking the meat, especially if using leaner cuts.
  • Vegetable skewers: For variety, grill separate vegetable skewers alongside the meat to prevent overcooking the vegetables.
