Introduction

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tablespoons red curry paste
  • 1 can (400ml) coconut milk
  • 2 cups chicken or beef broth
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon turmeric powder
  • Salt to taste
  • 8 oz egg noodles (or wide rice noodles)
  • Oil for frying (for crispy noodles)
  • 1 cup crispy fried noodles
  • Pickled mustard greens
  • Red onion (sliced)
  • Lime wedges
  • Fresh cilantro (chopped)

Instructions

  1. Prepare the Curry Base:

    • In a large pot, heat the vegetable oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
    • Stir in the minced garlic and cook for another minute until fragrant.
    • Add the red curry paste and turmeric powder, stirring well to combine and cook for 2-3 minutes until aromatic.
  2. Make the Broth:

    • Pour in the coconut milk and chicken or beef broth, stirring to incorporate.
    • Add fish sauce and sugar, and season with salt to taste. Bring to a simmer and let it cook for about 15-20 minutes.
  3. Cook the Noodles:

    • In a separate pot, bring water to a boil and cook the egg noodles according to package instructions. Drain and set aside.
  4. Fry the Noodles:

    • Heat oil in a small pan over medium-high heat. Add a handful of the cooked noodles and fry until golden brown and crispy. Remove and drain on paper towels.
  5. Assemble the Dish:

    • To serve, place a portion of the cooked noodles in a bowl. Ladle the hot curry broth over the noodles and top with your choice of meat (if using).
    • Garnish with crispy fried noodles, pickled mustard greens, sliced red onion, fresh cilantro, and a wedge of lime.
