Instructions

  1. Prepare the Noodles:

    • Cook the rice noodles according to package instructions. Drain and set aside.
  2. Cook the Broth:

    • In a large pot, heat the vegetable oil over medium heat. Sauté the chopped onion until translucent, about 5 minutes. Add the minced garlic and grated ginger, cooking for another 2 minutes until fragrant.
  3. Add Laksa Paste:

    • Stir in the laksa paste and cook for another 2-3 minutes, allowing the flavors to develop.
  4. Combine with Coconut Milk:

    • Pour in the coconut milk and chicken or vegetable broth. Bring the mixture to a gentle simmer and add the shredded chicken or shrimp. Season with salt to taste. Simmer for about 15 minutes.
  5. Assemble the Dish:

    • To serve, place a portion of cooked noodles in a bowl, ladle the hot laksa broth over the noodles, and top with bean sprouts, halved boiled eggs, and fresh herbs. Serve with lime wedges on the side.
