Introduction

Lamb Kleftiko is a cherished dish in Greek cuisine, known for its tender, juicy lamb slow-cooked with fragrant herbs, garlic, and vegetables. The name "Kleftiko" translates to "stolen" in Greek, referring to the bandits who would cook their stolen lamb in underground ovens. This rustic preparation creates a hearty meal, perfect for gatherings and celebrations.

Ingredients

  • 2 kg lamb shoulder, cut into large chunks
  • 4-5 garlic cloves, minced
  • 3 large potatoes, peeled and cut into wedges
  • 2 large carrots, sliced
  • 1 large onion, chopped
  • 1 cup cherry tomatoes
  • 1 lemon, juiced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup olive oil
  • Fresh parsley, chopped (for garnish)
  • Aluminum foil

Instructions

  1. Marinate the Lamb:

    • In a large bowl, combine lamb chunks with minced garlic, lemon juice, oregano, thyme, salt, pepper, and olive oil. Mix well and let it marinate for at least 1 hour (or overnight for better flavor).
  2. Prepare the Vegetables:

    • Preheat the oven to 160°C (320°F). In a large roasting dish, arrange the potatoes, carrots, onions, and cherry tomatoes.
  3. Combine Ingredients:

    • Place the marinated lamb on top of the vegetables in the roasting dish. Add any remaining marinade over the top.
  4. Cover and Bake:

    • Cover the roasting dish tightly with aluminum foil to trap moisture. Bake in the preheated oven for about 3 hours, or until the lamb is tender and falls off the bone.
  5. Serve:

    • Remove from the oven, and let it rest for a few minutes. Garnish with fresh parsley before serving.

  • While Lamb Kleftiko is rich in flavor, it is also high in fat. For a lighter version, you can use lean cuts of lamb and reduce the amount of olive oil used.
