Ingredients

  • 1 whole chicken (about 3-4 lbs)
  • 1 onion, halved

  • 3-4 cloves
  • 1 cinnamon stick
  • 1 tablespoon coriander seeds
  • 2-3 liters of water
  • 400g flat rice noodles (banh pho)
  • Fresh herbs (Thai basil, cilantro, green onions)
  • Lime wedges
  • Bean sprouts (optional)
  • Fish sauce to taste
  • Salt to taste

Instructions

  1. Prepare the Broth:

    • In a large pot, add the whole chicken, onion, and ginger. Fill with water until the chicken is fully submerged (about 2-3 liters).
    • Bring the pot to a boil over medium-high heat. Skim off any impurities that rise to the surface for a clear broth.
    • Add star anise, cloves, cinnamon stick, and coriander seeds to the pot. Reduce the heat to low and let it simmer for about 1 hour.
  2. Cook the Chicken:

    • After simmering for an hour, carefully remove the chicken from the pot and set it aside to cool slightly.
    • Once cool, shred the chicken meat into bite-sized pieces, discarding the skin and bones. Return the carcass to the pot for additional flavor.
  3. Strain the Broth:

    • Continue to simmer the broth for another 30 minutes. Then, strain the broth through a fine sieve to remove solids, returning the clear broth to the pot.
  4. Cook the Noodles:

    • In a separate pot, bring water to a boil. Add the flat rice noodles and cook according to package instructions until tender. Drain and rinse under cold water to prevent sticking.
  5. Assemble the Soup:

    • In serving bowls, place a portion of the cooked noodles. Ladle hot broth over the noodles and top with shredded chicken.
    • Garnish with fresh herbs, lime wedges, and bean sprouts if desired.
