Introduction:
Pljeskavica is a traditional Balkan dish that originated in Serbia. It is a large, flat, grilled meat patty made from a combination of ground meats, such as beef, lamb, and pork, seasoned with a blend of spices. Often referred to as the Serbian equivalent of a burger, Pljeskavica is known for its smoky, rich flavor and juicy texture. It is commonly served with onions, ajvar (a roasted red pepper sauce), and flatbread.
Ingredients:
- 500g ground beef
- 250g ground lamb
- 250g ground pork
- 1 small onion, finely grated
- 2 garlic cloves, minced
- 1 tablespoon sweet paprika
- 1 teaspoon smoked paprika (optional)
- 1 teaspoon ground black pepper
- 1 ½ teaspoons salt
- 1 tablespoon sparkling water (for extra tenderness)
- 1 teaspoon baking soda (optional, for a fluffier texture)
- 2 tablespoons olive oil (for grilling)
- 1 tablespoon chopped fresh parsley (optional, for garnish)
Instructions:
- Prepare the meat mixture:
- In a large mixing bowl, combine the ground beef, lamb, and pork. Add the grated onion, minced garlic, sweet paprika, smoked paprika (if using), black pepper, salt, sparkling water, and baking soda. Using your hands, mix the ingredients thoroughly until well combined, but avoid overmixing, which can toughen the meat.
- Marinate:
- Cover the meat mixture with plastic wrap and let it rest in the refrigerator for at least 1 hour. This marination allows the flavors to develop and ensures the patties remain juicy.
- Form the patties:
- After marinating, divide the meat mixture into 4-6 equal portions, depending on the desired size. Using your hands, shape each portion into a large, flat patty, about 1-1.5 cm thick. Pljeskavica patties are traditionally larger than regular burgers.
- Grill the patties:
- Preheat a grill to medium-high heat and lightly brush the grates with olive oil to prevent sticking. Grill the Pljeskavica patties for 6-8 minutes per side, turning once. Cook until the patties are browned and slightly charred, with an internal temperature of 70°C (160°F). If desired, baste the patties with olive oil during grilling for extra flavor and moisture.
- Rest and serve:
- Once cooked, transfer the patties to a plate and allow them to rest for a few minutes. Garnish with chopped parsley and serve with fresh onions, ajvar, flatbread, or other traditional sides.
Health Notes:
- Pljeskavica is a high-protein dish but can also be high in fat due to the mix of meats. For a leaner version, use more ground beef or substitute ground chicken or turkey. The sodium content can be adjusted by using less salt in the seasoning.
Serving Suggestions:
- Pljeskavica is best enjoyed with traditional Balkan sides like ajvar (a roasted red pepper and eggplant relish), raw onion slices, and flatbread. You can also serve it with French fries, a cucumber and tomato salad, or sour cream. It is often accompanied by a cold beer for a truly authentic experience.
Tips:
- Sparkling water for tenderness: Adding sparkling water to the meat mixture helps create a lighter, more tender patty.
- Resting time: Let the meat mixture marinate for at least 1 hour, but for best results, marinate overnight.
- Grill temperature: Ensure your grill is hot enough to give the patties a nice sear, but not so hot that they burn before cooking through.
