- Once the tamago is cooked, transfer it to a bamboo sushi mat (or a clean kitchen towel) and gently shape it into a rectangle while it’s still warm. Allow it to rest for a few minutes, then slice into uniform pieces, about 1 cm thick.

- Wet your hands with water to prevent the rice from sticking. Take about 20-25 g of seasoned sushi rice and shape it into a small oval ball.
