Introduction

Tartiflette is a traditional dish from the Savoy region of France, known for its indulgent combination of creamy Reblochon cheese, tender potatoes, smoky bacon, and caramelized onions. Often served in the colder months, this gratin-like dish is hearty and satisfying, ideal for après-ski meals or cozy family dinners. Tartiflette is usually enjoyed with a green salad and white wine, showcasing the flavors of the French Alps.

Ingredients

  • 1 kg waxy potatoes, peeled and sliced
  • 250 g Reblochon cheese, cut in half horizontally
  • 200 g smoked bacon lardons
  • 1 large onion, thinly sliced
  • 2 garlic cloves, minced
  • 200 ml crème fraîche (or heavy cream)
  • 100 ml dry white wine
  • 1 tablespoon butter
  • Salt and freshly ground black pepper
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the potatoes:

    • Boil the sliced potatoes in salted water for 10-12 minutes until just tender but not fully cooked. Drain and set aside.
  2. Cook the bacon and onions:

    • In a large skillet, melt the butter over medium heat. Add the bacon lardons and cook until crispy, about 5-7 minutes.
    • Add the sliced onion and garlic, cooking until softened and golden, about 10 minutes.
    • Deglaze the pan with white wine, scraping up any browned bits, and let it reduce by half.
  3. Assemble the Tartiflette:

    • Preheat the oven to 180°C (350°F).
    • In a large ovenproof dish, layer half of the boiled potatoes, followed by half of the bacon and onion mixture. Season with salt and pepper.
    • Add the remaining potatoes and top with the rest of the bacon and onion mixture.
    • Pour the crème fraîche evenly over the top. Place the two halves of Reblochon cheese, rind-side up, on top of the dish.
  4. Bake the Tartiflette:

    • Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly, and the top is golden brown. The potatoes should be tender and infused with the cheese and bacon flavors.
  5. Serve:

    • Let the Tartiflette rest for a few minutes before serving. Garnish with fresh parsley if desired. Serve hot with a crisp green salad and a glass of dry white wine.
