Essential details to help you make informed, healthy choices about our dishes.

Tonkatsu is a popular Japanese dish featuring breaded and deep-fried pork cutlets, served with a tangy sauce, shredded cabbage, and rice.

Introduction

Tonkatsu is a beloved Japanese dish that consists of a breaded and deep-fried pork cutlet, typically served with a tangy tonkatsu sauce. The pork is coated in panko breadcrumbs, which give it a light, crispy texture. Traditionally, Tonkatsu is accompanied by shredded cabbage, a bowl of steamed rice, and a side of miso soup, making it a complete and satisfying meal. This dish not only offers a delightful crunch but also a savory flavor that has made it a favorite in Japanese cuisine.

Ingredients

  • 2 pork loin chops (about 1-inch thick, boneless)
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1 cup panko breadcrumbs
  • Vegetable oil (for frying)
  • Tonkatsu sauce (store-bought or homemade)
  • Shredded cabbage
  • Cooked white rice
  • Lemon wedges (optional)

Instructions

  1. Prepare the Pork:

    • Pat the pork loin chops dry with paper towels. Using a meat mallet, gently pound the pork to an even thickness (about 1/2 inch). This helps tenderize the meat. Season both sides with salt and pepper.
  2. Set Up a Breading Station:

    • Prepare three shallow dishes: one with flour, one with the beaten egg, and the last with panko breadcrumbs.
  3. Bread the Pork:

    • Dredge each pork chop in flour, shaking off the excess. Dip it into the beaten egg, allowing any excess to drip off, then coat it in panko breadcrumbs, pressing gently to adhere. Ensure the cutlet is evenly coated for a crispy texture.
  4. Fry the Tonkatsu:

    • In a large skillet, heat vegetable oil over medium-high heat until shimmering (about 350°F / 175°C). Carefully add the breaded pork chops and fry for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 145°F / 63°C). Remove and drain on paper towels to absorb excess oil.
  5. Serve:

    • Slice the Tonkatsu into strips and serve hot with tonkatsu sauce drizzled on top or on the side. Accompany with shredded cabbage, a bowl of rice, and lemon wedges if desired.

Health Tips

  • While Tonkatsu is delicious, it can be high in calories and fat due to the frying process. To make it healthier, consider using lean cuts of pork, baking instead of frying, or air-frying for a lower-fat option. Serving with plenty of vegetables, such as the shredded cabbage, helps balance the meal.

Serving Suggestions

  • Tonkatsu is best enjoyed fresh and hot. Pair it with steamed rice and miso soup for a complete meal. The crunchy texture of the Tonkatsu complements the crispness of the cabbage.

Tips

  • Panko Breadcrumbs: Use high-quality panko breadcrumbs for a superior crunch. You can also toast them lightly in the oven before breading the pork for an extra crispy finish.
  • Tonkatsu Sauce: For a homemade version, mix equal parts ketchup and Worcestershire sauce, adding a splash of soy sauce and a pinch of sugar for depth of flavor.
  • Resting Time: Let the fried Tonkatsu rest for a few minutes before slicing to keep the juices intact and enhance tenderness.
